Paris Gourmet, Inc.® Announces The Garden City Hotel's Giuseppe Panepinto As 'Pastry Chef Of The Year'
- Top Pastry Chefs Competed at the International Foodservice Show of New York -
GARDEN CITY, Long Island, NY (Apr. 7, 004) – The Garden City Hotel’s executive pastry chef Giuseppe Panepinto,
was selected Pastry Chef Of The Year during the 15th Annual U.S. Pastry Competition®, recently held at the Jacob
Javits Convention Center, in conjunction with the International Foodservice Show of New York. The event showcased
original, cutting edge dessert displays and highly technical sugar and chocolate sculpted.
“The Garden City Hotel has always prided itself for maintaining a dedicated and exceptionally skilled culinary
staff,” said Chef DeBruyn, executive chef for the luxury property. “In this instance, ‘the proof is in the
pudding’!” DeBruyn teased.
The Chefs went through a pre-qualification phase to be eligible for the contest. After meeting the necessary
criteria, they competed by exhibiting a cake along with a chocolate and sugar sculpture at the International
Foodservice Show of New York. The chocolate and sugar sculpture showpieces had to depict the theme of classic
children’s fairy tales.
Panepinto’s chocolate and sugar sculpture reflected the Han’s Christian Anderson’s tale of The Toy Soldier and
the Jack in the Box. The showpiece displayed “Jack’s Box” as “glass” being cast completely of poured sugar and
the “spring” of the box made of dark chocolate. The toy soldier was made of pastillage, a form of “sugar dough”
and air brush in detail. His exceptional cake, titled “Pabana Noir”, won him a point spread of 50 points between
2nd place. It contained a rich chocolate mousse (Cacao Noel ®72% chocolate), pabana curd (Ravifruit® Pabana Puree)
and an almond crunch base.
Panepinto has been part of The Garden City Hotel culinary team, having graduated from The Culinary Institute of
America, Hyde Park, NY.
The judges of the competition included Thaddeus DuBois – The Borgata, Atlantic City, Christophe
Toury – Mandarin Oriental Hotel, N.Y.C., and Brian Schoenbeck – The Greenbriar Inn, White Sulphur Springs,
West Virginia. The judging procedures were presided over by The Vatel Club®, the oldest chef association in the world.
