Executive Chef De Bruyn presented a chic and contemporary offering to hundreds of guests as they viewed the Americana's fine fall fashions.

"Food, like fashion, is about presentation," says De Bruyn. "Inspired by the Style on the Go theme, I created bite-size cuisine to go making it easy for guests to mingle, view the show and taste the food. The Arctic char with pea coulis presented on a black spoon, a personal favorite, reflected the black and lime color theme. I enjoy presenting many dishes with different flavor combinations. This menu was a seasonal collection befitting the sophisticated Americana shoppers' palettes."

The award-winning De Bruyn is known for his imaginatively composed dishes and sense of occasion. Echoing his eclectic and popular menu at the chic and lively Rein, the hotel's signature restaurant, the evening's menu included:

*Fresh Black Mission Fig with Bailey Hazen Blue Cheese, Mint & Prosciutto
*Smoked Salmon Mousse in a Squid Ink Cone with Trout Roe
*Fisher Island Oysters, Pickled Cucumber & Caviar
*Mini-Heirloom Tomatoes Stuffed with Buffalo Mozzarella, Basil & Olives
*Spicy Tuna Squares
*Chermoulah-Marinated Shrimp
*BBQ Quail on a Jalapeno-Cheddar Biscuit with Corn Salsa
*Gravlax of Arctic char, Pea Coulis and Truffle Vinaigrette

He is also a recipient of the Maison de Qualité diploma from Le Club Gastronimique Prosper Montagné, a society of French food professionals.
